Desperate: Need Veggie Recipes Immediately!

As you may recall from an earlier post of mine, veggies on this island are incredibly expensive. However, I still need to integrate vegetables into my diet as much as possible, as training is leaving me hungry 24/7 despite the fact that I am getting plenty of proteins (you know it is taking every ounce of effort to NOT turn this into a crossfit blog).

Nearly every meal I add a few vegetables, but it is time to step it up and branch out (pun intended). Family, friends, CFers, anyone really, please send me an email, FB message, even comment on this post (with your name) on how you cook, bake, fry, grow, WHATEVER YOU DO to your veggies.

Below is this morning's breakfast--an omelet complete with garlic, mushrooms, spinach, a bit of tomato, and onions. How can I add more vegetables to breakfast, lunch, dinner, snack...?



And family, don't worry. This is in addition to my juice plus ;)

  1. Brunch Tomatoes -
    Cut a pound or so of tomatoes into quarters (I like romas for this, but any will work). Toss them with some chopped garlic (1-3 cloves), a tablespoon of dried herbs (I like Italian, but oregano, parsley, or basil will work) and a tablespoon or two of olive oil.

    Spread the spiced tomatoes into a baking dish and bake for 40 minutes at 400F (200C or Gas6 in UK).

    You can eat it like this, or...
    Clear a little space between the tomatoes and crack an egg (or 2 if you want) into the gap. Put it back in the oven for 5-10 minutes. The eggs poach to deliciousness.

    Great with salad and toast.
